Ingredients

  • 1
    lb
    ground beef
  • 1
    diced white onion
  • 2
    tbsp
    taco seasoning
  • ½
    cup
    water
  • 1
    can black beans,
    drained and rinsed
  • 1
    can of corn,
    drained and rinsed
  • ¼
    cup
    salsa
  • 8
    large burrito-sized tortillas
  • 1 ½
    cups
    colby jack and cheddar cheese,
    or any type you prefer
  • Sliced green onion for topping (optional)

Instructions

  • 1. Preheat Oven & Prep: Preheat your oven to 400℉ (200°C). Have your ingredients measured and ready.
  • 2. Cook Beef & Onion: In a large skillet over medium heat, cook the ground beef and diced onion until the beef is completely browned and the onion is softened. Drain off any excess grease thoroughly.
  • 3. Season the Mixture: Add taco seasoning and ½ cup water to the skillet. Stir well, bring to a simmer, and cook for about 1-2 minutes until slightly thickened.
  • 4. Add Beans, Corn, & Salsa: Stir in the drained black beans, drained corn, and salsa. Combine thoroughly, then remove the pan from the heat.
