  • 14 oz can black beans, drained and rinsed
  • 14 oz can pinto beans, drained and rinsed
  • 15 oz can tomato sauce, or diced tomatoes
  • 2 tbs tomato paste
  • 2 ½ cups vegetable broth
  • ½ cup heavy cream, optional, for a richer, creamier soup. For a fully vegan version, use a plant-based cream substitute.

  • In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat. Once shimmering, add the diced white onion and yellow bell pepper.
