Ingredients

  • 9 eggs
  • ¼ cup milk
  • 1 tsp salt
  • 1 tsp black pepper
  • 9 slices bacon
  • 1 ½ cups cheddar cheese, shredded
  • 3 Tbsp butter, melted
  • 1 Tbsp ranch seasoning mix
  • ½ Tbsp brown sugar
  • 12 oz package Hawaiian rolls

Instructions

  1. Preheat oven to 350 degrees F (175°C). Spray a sheet pan with nonstick spray, or line it with parchment paper.
  2. Cut each slice of bacon into 4 pieces. Cook bacon in a large skillet over medium heat until crispy. Set aside. Carefully discard all but 1 Tbsp of the bacon grease in the pan (you will be cooking the eggs in the bacon grease).
  3. To a large bowl, add in the eggs, milk, salt, and pepper. Whisk well.
  4. Add egg mixture to the skillet the bacon was cooked in, then scramble. Set aside.
  5. Cut the entire Hawaiian loaf horizontally. Without separating each roll, place the bottom part of the rolls on the sheet pan.
  6. Sprinkle 1 cup of cheese on the bottom of the rolls. Layer scrambled eggs, bacon slices, and top with remaining cheese. Place the top buns over the cheese.
  7. To a small bowl, add in the melted butter, ranch seasoning, and brown sugar, then whisk well. Brush mixture over the tops of the rolls.
  8. Bake for 15-20 minutes or until the cheese has melted and the rolls are warm.
